Morning Glory Healthy Muffins
I love baking! Two of my roommates in college were HUGE bakers and got me into baking. It's so fun to follow a recipe and then have a delicious treat at the end. This recipe is perfect for when you are in the mood for something sweet and tasty but want to be healthy. It has 4 different fruits and veggies in them! If you're feeling extra fancy you can add some chopped almonds on top! They're perfect for breakfast, snack, dessert, you name it! After letting them cool, I kept them in a Tupperware container in the fridge so that they would last all week!
Pineapple and Quinoa Summer Salad
This week I wanted something light and healthy after a weekend of eating fries and fried fish sandwiches. A good diet is all about balance right?! I found this amazing recipe but since I didn't have time to whip up some chicken, I changed a few things to make it even quicker! It's super delicious and I will definitely be making it many more times this summer!
Pineapple and Quinoa Summer Salad
Prep and cook time: 15 mins
Servings: 5
Ingredients:
1/2 cup of uncooked quinoa
1 cup of water
1 Knorr chicken cube*
1 pineapple
2 cups of grape tomatoes
4 cups of spring mix
2 cans of sweet corn kernels
1/2 red onion
1 mozzarella ball
4 lemons
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp garlic powder
1 dash of paprika
1 dash of Trader Joe's 21 spice salute
*You can also substitute the Knorr chicken cube and the cup of water for 1 cup of chicken broth
Directions:
1. Add 1/2 cup of quinoa, cup of water, Knorr chicken cube* and cook on high heat until boiling. Once boiling, cook on medium heat until all the water is absorbed, about 10 minutes.
2. While the quinoa is cooking, cut the pineapple, and dice the red onion and mozzarella.
3. In a bowl, combine the grape tomatoes, spring mix, corn, red onion, and mozzarella.
4. In a small container mix together the olive oil, juice of the lemon, garlic powder, paprika, and 21 spice salute and then add to the salad bowl.
5. Serve with quinoa and pineapple on the side.
Protip: If you want to save the salad for another night, make the dressing and refrigerate it but don't add it until right before eating (whether the same night or a few nights later)!

Easy Potluck Crowd Pleasers

Whether you're going to a potluck or your friend is hosting a get-together, it's always nice to bring a dish! I would first ask the hostess if there is anything she needs in particular and if so, definitely bring that! Otherwise, here are a few ideas!
1. Ice Cream Pie - This recipe is so simple and is a huge crowd pleaser because it tastes amazing! I just added toppings (chocolate syrup, chopped peanuts, and cinnamon) to make it extra fancy!
2. Watermelon Wedges - Now that summer is in full gear I'm all about the cut up watermelon on a warm night! If cutting a giant watermelon seems daunting, check out this step-by-step tutorial!
3. Bruschetta - This is the perfect summer finger food. It's light, healthy, and super delicious! This home-made bread is so tasty and would go great with this 15 minute bruschetta recipe (to make it even faster, you can swap out the fresh basil and fresh garlic for dried basil and garlic powder from the spice aisle!).
4. Fancy cheese and crackers - Pick up some artisan cheeses (like Brie, goat cheese, or Manchego) and a few different types of crackers. If you're feeling extra fancy, add some olives or a few berries. It's super easy yet extra delicious! Check out this guide on how to assemble the perfect cheese platter!
5. Mac and cheese - Although not the healthiest of the bunch, mac and cheese is a sure-fire way to become everyone's favorite. I recently went to a get together where one of the hostesses made this recipe. It was beyond delicious! She filled transparent plastic cups half way full and popped in a plastic spoon to complete the look.
6. Drinks - If you're celebrating something, grab a bottle of Prosecco or Champagne. If there will be kids, bring a family-friendly drink like homemade lemonade or tea. Sometimes drinks get overlooked, so check with your host/hostess!

Avocado Toast
I love avocados but I don't love eating them alone. I had an extra 1/2 avocado from making this delicious recipe, and decided to use it to make some avocado toast. I ended up adding more things to the toast then pictured, so be sure to check out the recipe below!!
Avocado Toast
Prep and cook time: 5 mins
Servings: 1
Ingredients:
1 piece of your favorite bread (I used whole grain!)
1/2 avocado
1 tsp of red pepper flakes
1 tsp of Sriracha
1 tomato
Directions:
1. Toast the bread until desired crunchiness.
2. Remove 1/2 avocado from peel and spread it on the toast.
3. Add Sriracha, red pepper flakes, and cut up tomato.
4. Enjoy!

Tuna Cakes with Avocado and Corn on the Cob
After Memorial Day and all the pictures of grilled corn on the cob, I was having a major corn craving! I also needed to use up some tuna so I decided to whip up these delicious green onion tuna cakes with avocado and fresh corn on the cob. Just thinking about the meal makes my taste buds sing. The tuna cakes are adapted from Elise's "Tuna Patties" recipe from Simply Recipes.
Tuna Cakes
Prep and cook time: 30 mins
Chilling time: 1 hour
Serving: 4 tuna cakes
Ingredients:
12 oz of tuna packed in vegetable or olive oil
2 tsp Dijon mustard
1/2 cup of wheat bread with the edge cut off, torn into small pieces
4 green onions
1 tbsp of fresh lemon juice
1 tsp of lemon zest
2 tbsp of parsley
1 tsp of red pepper flakes
1 tsp of Trader Joe's 21 spice salute
1 tsp of Siracha
1 egg
1 tbsp of olive oil
1/2 tsp butter
2 avocados
Directions:
1. Add all the ingredients into a bowel, except the olive oil, butter, and avocado. Make sure to include the oil from the can of tuna. Mix the ingredients together until well-encorporated.
2. Form 4 tuna cakes and chill in the refrigerator for 1 hour. I skipped this step but paid the price because my tuna cakes fell apart when I flipped them in step 4!
3. Place olive oil and butter in a pan and cook the tuna cakes for 8 minutes with the lid of the pan on.
4. Carefully flip the tuna cakes over and cook for another 8 minutes.
5. Cut up half an avocado to go with each tuna cake.
Corn on the Cob
Total time: 20 mins
Prep time: 5 mins
Serving: 4
Ingredients:
4 pieces of sweet corn on the cob
2 tsp of salt
2 tsp of butter
Directions:
1. Boil a pot of water with 1 tsp of salt added.
2. While waiting for the water to boil, remove the husks and silk from the corn.
2. Add the corn to the boiling water and cook for 20 minutes.
3. Add a sliver of butter and a dash of salt to each cob of corn.

5 Minute Hummus Recipe
The other day I was entertaining some friends when we started talking about hummus. I didn't have any hummus on hand but had all the ingredients, so I decided to whip up a batch. It was super easy to make and extra delicious. It's great on crackers, bread, carrots, cut up zucchini, and even as a topping on sandwiches! The sriracha is definitely the game-changer, so make sure you add that!! (Side note: has anyone seen the Sriracha documentary? I really want to see it!) Also, it makes a lot more than pictured but I forgot to take a picture the day of, so this is the leftovers I had as my snack the next day!
Total Time: 5 minutes
Servings: 4

Lentil Stew Recipe
This soup recipe is AMAZE. It is super healthy because it has tons of veggies but it is also filling because of the lentils. The only thing I changed was using chicken broth instead of water, to add more flavor. The recipe is enough to have tons of left overs, which is a huge bonus in my book. Pesto Turkey and Gruyère Pita Sandwich
Sometimes I get into a lunch rut where I pack the same old boring sandwich and then I'm not excited to eat my lunch. Eating lunch is one of my few breaks during the day, so I make sure that the food is extra delicious so I enjoy my break! One of my favorite go-to's when I'm feeling "bleh" about my lunch game is this amazing pesto turkey and Gruyere pita sandwich. It's super delicious and I always get a handful of questions each day I bring it about what kind of delicious lunch I'm eating! I got my inspiration from this sandwich but added pesto and used spring mix instead of lettuce. Gruyere is definitely a pricier cheese, but if you have a Trader Joe's in your area, they have Gruyere for pretty affordable prices! For the pesto, Trader Joe's definitely has the tastiest and most economical pesto, so I would highly recommend their pesto! I usually will use one apple for the whole week of sandwiches, so I'll cut off a few slices each day and save the rest in a Tupperware for the next day! Let me know what you think!

No-Bake Peanut Butter Bars
I am the peanut butter queen. I love love love peanut butter. If a day goes by where I don't eat a nut-butter, something is wrong. I didn't eat peanut butter growing up, so I have to make up for lost time! I was so excited when I found this recipe because it combines 2 of my favorite things: chocolate and peanut butter! Sally's Baking Addiction is definitely my go-to baking blog, and this recipe is nothing short of perfection: 5 ingredients and no-bake! Easy Chicken Fajitas
I love Mexican food and these chicken fajitas are the absolute BEST. They are extremely easy to make -- only 15 minutes of prep time and then pop them in the oven! They're also pretty healthy and filling! Basically, they meet all the important meal-prep criteria in my book! I usually add the fajitas to a warm tortilla and then add lettuce, tomato, sour cream, cheese, and guacamole *insert praise emoji*. The recipe is from Budget Bytes! Easy Dinner: Pesto Chicken with Veggies Recipe
I'm all about healthy and delicious dinners, especially ones that don't take a long time to make. I love this pesto chicken recipe and make it frequently. I also just discovered this delicious veggie dish which I will be adding to my regular rotation of meals. The pesto chicken is adapted from Gina's Skinny Recipes and the veggie dish is adapted from Simple Vegan Blog. I love both of them for creating these amazing recipes! I added a warm roll because who doesn't love rolls?! The whole wheat frozen rolls are super great because you pop them in the oven for 8 minutes and they are warm and taste heavenly! You can work on both these recipes at the same time to condense the total prep time!
Chicken
Total time: 20 mins
Prep time: 8 mins
Serving: 6 pieces
Ingredients:
3 chicken breasts
6 oz of pesto
1 tablespoon of basil
2 large tomatoes
1 cup of shredded mozzarella cheese (buying the bag of shredded mozzarella makes things a lot easier!)
Directions:
1. Preheat oven to 400 degrees.
2. Slice each chicken breasts to make 2 thinner pieces of chicken by cutting it across (not down the middle).
3. Spread pesto evenly on each piece of chicken. Drizzle the basil on top of the pesto.
4. Bake for 20-25 minutes depending on the thickness of your chicken breasts (I like to cut through a piece of the thickest piece after 20 minutes just to make sure it's fully cooked!)
5. After the chicken is about done cooking, add 2 thick slices of tomato on each piece of chicken and top with mozzarella.
6. Bake for another minute and then serve!
Veggies
Total time: 40 mins
Prep time: 20 mins
Serving: 6
Ingredients:
2 green peppers
1 zucchini
1/2 bag of baby carrots
1 white onion
1 sweet potato
1 tbsp thyme
1 tbsp all-spice
1 tsp paprika
1 tsp garlic powder
2 tbsp olive oil
Directions:
1. Preheat oven to 400 degrees.
2. Boil the sweet potato in a pot of water as you prep the other veggies.
3. Chop the green peppers, zucchini, carrots, and onion. Add to a bowl and mix together the spices and the olive oil.
4. The sweet potato won't be completely cooked but it'll be soft enough to cut through. Chop the sweet potatoe and add to the mix of veggies.
5. Place the veggies in a cooking dish and bake for 20 minutes.

How to Eat Healthy When You're Busy
Hia! Sorry for not posting in a little while, things have been pretty crazy. Since I've been so busy, I thought it would be fitting to do a post about how to eat healthy when you're busy (aka most days for me and I'm sure for you too!). It's super easy to be healthy when you have lots of time to prep healthy meals but when I'm busy, all my healthy habits go out the window. I've started to find my rhythm and I wanted to share some of my tips with you! For me, eating healthy has to be the easy and simplest option, otherwise I'll go for the super easy take-out or vending machine snack.
1. Water - I always carry around a bottle of water (I especially love these because I am more likely to drink it if there is minimal effort on my part aka I don't need to even unscrew the cap because there is a straw, plus they don't leak which is super nice!!). Drinking water keeps me hydrated when I'm drinking a lot of coffee and tea (caffeine dehydryates you!) and helps me have better work outs. Drinking water also makes sure I'm not overeating because a lot of times when you think you're hungry, you're actually thirsty/dehydrated! *Ideally* you should drink 2 liters a day.
2. Salads - Salads are SO easy to make. They are perfect for if I need to make dinner very quickly. I'll buy salad ingredients (mixed greens, cucumbers, tomatoes, shredded carrot) on the weekend and they last all week for daily salads. I like to mix it up with protein so 1 day of the week I'll make lots of chicken or salmon and then cut it up and put it in a container in the fridge. When I'm making the salad the morning of, I'll just mix the fixings (mixed greens, cucumbers, tomatoes, shredded carrots, protein, dried cranberries, sunflower seeds, fruit) into 1 tupperware. It's seriously that easy! I like to put vinaigrette in a separate container just so my salad doesn't get soggy. It only takes a few minutes in the morning, it's super healthy, and because of the protein I'm actually full afterwards! I also like to have bread with my salad (hello fellow carb lovers!), so I'll either get sandwich bread or baguette and toast it when I'm about to eat dinner. This is definitely minimal effort (only a few minutes for a super healthy dinner vs 30 minutes to 1 hour of cooking a hot meal). Plus, if I have the salad already made it's much easier to eat the salad than to decide on and go get take out.
3. Smoothies - Smoothies are a game-changer for me. They're a perfect snack either in the afternoon or after dinner. They also only take a few minutes to make and are packed with fruits, yogurt, chia seeds, and oatmeal, so you'll stay full for longer than just if you just ate some fruit! I'm only slightly obsessed with smoothies. Again super minimal effort for a fancy, delicious, and extra healthy snack!
4. Healthy snacks & cutting your fruit - In addition to my smoothies I need to snack throughout the day. In the morning, granola bars and mixed nuts are my go-to. For lunch I'll have a sandwich and then have a cut-up apple or strawberries as my post-lunch "dessert". Again with the minimal effort idea, I'm super weird and if you put an apple in front of me, I probably won't eat it. BUT, if you cut up an apple and put it in front of me it will be gone in 5 seconds. I'm weird like that but maybe cutting up fruit might work for you too!

4 Delicious Recipes for Ripe Bananas
One of my least favorite things is when you're at the end of the week and your bananas are too ripe. You don't want to throw them away but you also don't want to eat them plain. (Does anyone else hate the texture of over-ripe bananas?!) I have a few recipes to save the day and your bananas!
1. Bananas with cinnamon and honey! Adding cinnamon and honey makes the banana sweeter and masks the mushier texture of an over-ripened banana. I love this combo so much! I especially love this combo on a piece of peanut butter toast! *perfection*
2. Banana oat chocolate chip cookies - These cookies are SO easy to make! I usually mix together a banana or two, oats, chocolate chips, and cinnamon. You can also halve the recipe if you only have 1 over-ripened banana! Trust me, the cookies will be gone after a few minutes because they are so stinking delicious! It's totally okay to eat 6 at a time because they're healthy, right?! ;)

3. Smoothies - I love adding an over-ripened banana to a smoothie because it makes the smoothie taste extra sweet and adds extra fruit! You can read about my favorite smoothie recipe here!

The Perfect Fruit Smoothie
I have a huge sweet tooth and because of that I love eating fruits because of their sweetness. Growing up, my mom would make the most delicious fruit salads with kiwi and raspberries and every delicious fruit (I'll have to make a whole post about it because it's that good!). Another way I love to eat fruit is in a smoothie. A lot of times I'll eat a smoothie for lunch or as a snack because it's an easy on-the-go type meal that I can eat at my desk, while walking, or while running errands. I make smoothies a few times a week and I've perfected my go-to smoothie so I thought I'd share it with you!
Total time: 5 mins
Prep time: 5 mins
Serving: 1 smoothie
Ingredients:
1/2 cup of frozen strawberries
1/2 cup of frozen blueberries
1/2 cup of frozen pineapple
1/4 cup of orange juice
1/4 cup of Greek yogurt
1/4 cup of steel cut or regular uncooked oats
1 tablespoon of chia seeds
Directions:
1. Put all ingredients in a blender and pulse for 30 seconds until well incorporated.
2. Serve cold, preferably with a cute reusable straw!

Easy and Delicious Quiche
Anyone who knows me can attest to the fact that I take forever five-ever to pick out groceries, clothes, toiletries, medicine, really any item where I have to spend money. I want to weigh all my options, which ends up taking way too long and drives all my friends and family crazy. The other day my sister and I were at the grocery store and my sister was starting to get stir crazy from me weighing the pro's and con's of every type of lettuce (There were mixed greens, spinach, romaine, the possibilities were seriously endless!). We were both exhausted from a long day and weren't thrilled about having to come home and cook dinner. Suddenly my sister spotted the pre-made pie crust and suggested making a quiche. I jumped at the idea because it's easy, healthy, delicious, and pretty cheap to make. Get ready to for one of the best quiche recipes in the world, handed down from hundreds of quiche-making experiments from my lovely dad!
Total time: 50 mins
Prep time: 30 mins
Bake time: 20 mins
Serves: 8 slices
Ingredients:
-1 store-bought pie crust
-1 spritz of no-stick spray
-1 tablespoon of olive oil
-1 bag of frozen spinach*
-3/4 of a white onion
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/2 teaspoon pepper
-4 eggs
-1 cup of shredded cheddar cheese
-2 teaspoons of sour cream
Directions:
1.Take the pie crust out of the plastic container but do not unroll it. Let the rolled up pie crust sit on the counter for 15 minutes.**
2. Preheat oven to 350°F.
3. Add no-stick spray to pan and then unroll pie crust. Place pie crust in the dish and poke it with a fork to make holes all around the pie crust.
4. Bake pie crust at 350°F for 8 minutes.***
5. Dice onion. Add olive oil and onions to a pan and sauté for about 5 minutes. Add spinach and stir until spinach is cooked, about 10 minutes. Stir in garlic powder, salt, and pepper.
6. Crack and beat eggs. Add sour cream to eggs and stir until incorporated.
7. Add veggies to pie dish and place a layer of cheese on top. Add the eggs, followed by a second layer of cheese.
8. Bake at 350°F for about 20 minutes, or until firm.
*You can switch out spinach for broccoli or asparagus but I love how it tastes with spinach!
**The pie crust comes from the refrigerator and will tear if it isn't at room temperature. Letting it warm up to room temperature will allow it to be more supple and less likely to tear when you're placing it on the pie dish.
***This makes the crust extra flaky and delicious!

6. Crack and beat eggs. Add sour cream to eggs and stir until incorporated.
7. Add veggies to pie dish and place a layer of cheese on top. Add the eggs, followed by a second layer of cheese.
8. Bake at 350°F for about 20 minutes, or until firm.
*You can switch out spinach for broccoli or asparagus but I love how it tastes with spinach!
**The pie crust comes from the refrigerator and will tear if it isn't at room temperature. Letting it warm up to room temperature will allow it to be more supple and less likely to tear when you're placing it on the pie dish.
***This makes the crust extra flaky and delicious!

Brownie Bites
I love baking. For me, by spending time making something sugar-filled and delicious, I am showing my friends, family, and coworkers that they are special and that I care about them. It's fun to bring treats for someone's birthday or for a holiday so everyone can share. One night, I was planning to make brownies for a birthday when I realized that I didn't have a brownie pan. Previously, I made them in a pie dish and sliced them up but that wasn't as portable or sharable for a large group. All of a sudden, a brilliant idea struck me: what if I made brownies in a cupcake pan?! No cutting, no crumbs, no fighting over the corner piece because everyone gets some crust! The Brownie Bite was born! I love making sweets from scratch but I've never found a homemade brownie recipe that was better than a mix, so I always use mixes. To make these, I followed the box directions for the mix, put the batter in the cupcake pan, baked, and voila amazing Brownie Bites that were a HUGE hit!!

The Skimm!
One of my favorite morning routines is to wake up and check the news by reading the Skimm at breakfast and then listening to NPR in the car. The Skimm is a witty daily email with summaries of the biggest news around the world over the last 24 hours. It is always extremely on point with explaining the biggest news of the day, so I'm ready for discussions at work or at the dinner table. The best part is that it is always makes me laugh because it is filled with jokes and silly headlines. You can see how awesome it is for yourself by signing up to get the daily email too! Also, their website has lots of additional resources to stay in the know through their Skimm Guides online, which include outlines from March Madness 2015 to Fracking to Net Neutrality. I seriously love the Skimm and talk about it so much that a bunch of my friends and family read the Skimm now, and they agree!

Healthy Pizza Recipe//A Slice of Heaven
What?! "Healthy" and "pizza" in the same name?! Crazy, I know! This is the real deal, though. My sister made this recipe a lot growing up and it is beyond delicious. It tastes better than any restaurant-made or store-bought pizza and it is very simple to make. If you're like me and you love thick crusted pizza with lots of veggies, this is a slice of heaven (see what I did there :D)?
I like to use red, yellow, and green bell peppers to add color, but you can use whichever type of bell pepper you want. The recipe calls for 1 1/2 bell peppers, so I like to slice the left over bell pepper and save it for later in the week to eat as a snack with hummus. Below I served my pizza with a side salad of mixed greens, cucumber, fresh blueberries, and oil and vinegar dressing.
Total time: 45 mins
Prep time: 20 mins
Bake time: 25 mins
Serves: 6 thick slices*
Ingredients:
-1 bag of store-bought white pizza dough**
-1 1/2 bell peppers
-1/2 onion
-6 oz of shredded mozzarella cheese
-1 small can of tomato sauce (~4 oz)
-1 tbsp basil
-No-stick spray
-optional: crushed red pepper
Directions:
1. Preheat oven to 400°F.
2. Clean and slice bell peppers and dice onion.
4. Add no-stick spray to a pan. Remove dough from plastic and stretch it out with your hands. Place dough onto the pan, and make sure you spread it out as much as possible. Do not worry about it being too thin in certain places because the dough will rise in the oven!
5. Add tomato sauce to the dough, and then add 1/2 of the mozzarella cheese.
6. Spread veggies onto pizza and top with the second 1/2 of the cheese.
7. Sprinkle 1 tablespoon of basil on top, and crushed red pepper if you chose.
8. Bake for 25 mins at 400°F.
*I usually eat this with a salad on the side, so 1 slice is plenty for me! We keep any leftovers in aluminum foil or in Tupperware in the fridge and it will last another 2-3 days.
**You can use wheat dough, but it is much thicker and harder to spread on the pan.
